Meet the chef

Chef Adrian Barajas from Milpa restaurant preparing a dish

Hailing from Mexico City, chef Adrian Barajas mixes modern deconstruction cuisine with the richness of traditional Mexican dishes.

He is almost like a mad scientist who decided to breath new life into his grandmother's recipe book. Always innovating and finding new ways to blend the old with the new, chef Adrian, who previously worked as the Head Chef of the prestigious el Mangle restaurant, struck out on his own with his partner to concentrate on a more personalised menu and culinary experience.
